Slow Cooker Chili Verde

Set it and forget it with this easy chili verde recipe!

A finished bowl of chili verde over noodles

1 onion, diced

1 poblano, diced, seeds removed

1 large green bell pepper, diced

2 cloves garlic, finely minced

5 large green tomatillos, finely diced

3 tablespoons ground cumin

1 teaspoon salt

1 teaspoon freshly ground black pepper

1 pound boneless pork, cut into 1-inch cubes

1/4 cup green sofrito (of you don't have green sofrito, use 1/8 cup finely chopped fresh cilantro instead)

Place all vegetables in the bottom of a slow cooker and mix with seasonings. Layer pork on top of vegetables, and pour green sofrito (if using) over the pork. Cover and set on low for 6 hours or until pork is tender. Adjust seasoning with more salt and pepper as needed. Serve over rice or noodles.
