Everybody's basic classic standby winter squash.  Bake or steam it & then mash, or cut in chunks & oven roast as part of a winter veggie medley.  Squash soup is a hearty, warm-me-up treat; butternut is also great chunked into stews (with meat or all-veggie).  Either sweet or savory seasonings will enhance the rich flavor of this squash.

  • Store all winter squashes in a cool, dry place -- don't refrigerate whole squash, but if you've used part of one then put the rest in the fridge.  Properly stored whole squash will keep at least a few weeks.
