Blueberry Honey Vinaigrette

This sweet, tangy vinaigrette is perfect for steamy summer days. Ready in only five minutes!



1/4 Cup Balsamic Vinegar

1 Cup Blueberries

3 Tablespoons Honey

1 Tablespoon Lemon or Lime Juice

1/4 Teaspoon Salt

1/4 Teaspoon Black Pepper

1/2 Cup Olive Oil, or other neutral-flavored vegetable oil


In the cup of a blender, mix vinegar, blueberries, honey, lemon or lime juice, salt, and pepper on low. While the blender is running, slowly drizzle in oil until mixture is emulsified and thick, about a minute.


Store in the fridge in an airtight bottle or container up to a week.
